As part of the OCCUPATION: DESIGNER exhibition, MAD has invited Véronique Toefaert — a “transforming” food designer — to occupy the cafeteria of its new building for a week.
Her philosophy is very simple: nothing is wasted, everything is transformed. She buys, transforms and reinterprets products to reveal unsuspected interactions between foods.

BIO Véronique Toefaert
Following oenology studies at the Wine University of Suze-la-Rousse in Côtes du Rhône, Véronique Toefaert worked with Peter Thustrup (Rare and Collector Wines, in Paris) and became an expert in old wines. In 1989, she became the first woman in the world to receive the title of expert in rare and collector wines. A search for greater understanding led her to take a course in Jungian analysis in Paris with psychoanalysts Mariel and André Garel (La Métanalyse) and to train with Leon Susswein in Global Kinesiology. She opened Voyage à travers les sens, a Restaurant/Concept in 2000. Its very young chef was Christophe Hardiquest, who later received two Michelin Guide stars (Bon-Bon). Véronique has been exploring the senses...our senses, for a very long time! As a professional gourmet, she leads the 5 SENS workshop as part of a Master in Design Food at the Royal Academy of Fine Arts, organises themed dinners, invites to her table d'hôtes 2X a week and creates gourmet foods (spice salt and Granola) for a number of fine food houses.
